PB & J Smoothie

Cheers to the brave souls who attended my Zumba class last night. We are amidst a hazardous winter storm with only a few short weeks until it is officially spring. Nothing like getting a good workout in before being snowed in for two days!

I demoed my PB & J Smoothie, which features almond butter instead of peanut butter. Almonds are the least acidic in the nut family. Peanuts are actually part of the legume family, known to cause inflammation and to contain aflatoxin. Aflatoxin is a dangerous mold that can grow on peanuts and is a known carcinogen. The combination of almonds and sweet fruits in this smoothie make it very kid-friendly!

I use spinach in my smoothies because it has a mild taste. In combination with fruits and other ingredients, you can barely taste it at all! Another win to get greens into little kids (and stubborn adults). Click the link below to hear more:

PB&J

Ingredients
2 cups of water
1 cup frozen strawberries
1 cup frozen blueberries
2 bananas
6-8 dates
2 tbsp almond butter
pinch of cinnamon
2 cups baby spinach leaves

Directions
Combine all ingredients in a blender. Blend at high speed for 50 seconds. ENJOY!
